 4 Tablespoons Butter
¾ Cup Chopped onion
1 ½ Cup Chopped Ham
2 Cups Cooked Rice
3 Eggs
1/4  Cup Finely Chopped Bell Pepper
1/3  Cup Parmesan Cheese
1/2  Teaspoon Salt
1/4  Teaspoon Pepper
1 Cup Grated Cheddar Cheese
1 Tablespoon Fresh Minced Parsley

Womens recipe:

Melt butter in an oven proof skillet. Add onion and sauté until transparent. Remove from heat. Gently toss in ham and rice with a fork until well blended. In a small bowl, beat eggs and next four ingredients. Return skillet to heat and stir in egg mixture cooking until done. Sprinkle with cheddar cheese and parsley. Place under a broiler until cheese melts. Serves 4.

Mans Recipe:
same as above except ……

Row the cheddar cheese across the top of the mixture leaving about one inch between rows. Sprinkle parsley lightly along cheese. This allows all of the colors of the ingredients to be seen and they are very bright. On Valentine’s Day cover entire mixture with cheese and make a Valentine shaped heart with the parsley (show some imagination here guys she will appreciate it).

Strawberries and Cream. Place the cream in a bowl and allow it to warm slightly. DO NOT cut the strawberries. Leave the tops on, this adds to the color of the meal.

Serve with Orange Juice or other colorful juice.

This recipe is not hot or spicy and makes a great Sunday Brunch.
Helpful hint – keep the parsley moist so it maintains its color, remove the stems, use only the leafy portion. This makes a very tasty bright colorful meal. I know real men don’t measure ingredients but in this case they do. This is all about taste, texture, color and doing something nice for your wife/girlfriend ……. come to think of it; this is why my Grandfathers Twin City 21-32 is still not finished.




Spinach Salad

10 oz. fresh spinach
1 lb. crisp bacon, crumbled
6 eggs boiled and diced
Onion flakes (optional)

Dressing:
2 tbs catsup
1 1/2 cup real mayonnaise
2 tbs salad oil
1/4 cup milk
1/2 cup sugar
2 tbs vinegar
dash salt
